Gluten-Free Cake Recipes

Chocolate Gluten-Free Cupcake Recipe

1 1/2 cups white rice flour
3/4 cup millet flour
1/2 cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon xanthan gum
4 eggs
1 1/4 cups white sugar
2/3 cup sour cream
1 cup milk
2 teaspoons vanilla extract

First, preheat your oven to 350 degrees. Mix all of your dry ingredients well in a bowl. Mix the wet ingredients in a second bowl and then mix together with the dry. Spoon into a muffin tin and then proceed to bake in the oven for 20-25 minutes. Afterwards, serve with frosting, if you wish.

Gluten Free Yellow Cake Recipe

1 1/2 cups white rice flour
3/4 cup tapioca flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons baking powder
1 teaspoon xanthan gum
4 eggs
1 1/4 cups white sugar
2/3 cup mayonnaise
1 cup milk
2 teaspoons gluten-free vanilla extract

Grease two 8x8 pans and then use gluten free flour to flour them. Leave them be until later. Preheat your oven to 350 degrees. Then, take all of your dry ingredients and mix them. Then take the sugar, mayonnaise and eggs and mix them until they are very, very fluffy. Add dry ingredients and the milk and vanilla and mix. Spoon into pans and bake for 25 minutes or longer, if needed. After your cake has cooled, use gluten free toppings to frost it and make it as tasty as you wish!

This last cake might remind you of something that Paula Dean or Martha Stewart would make. This cake is a bit different, but definitely worth a try!

Garbanzo Chocolate Cake Recipe

1 1/2 cups semisweet chocolate chips
1 (19 ounce) can garbanzo beans, rinsed and drained
4 eggs
3/4 cup white sugar
1/2 teaspoon baking powder
1 tablespoon confectioners'

First, melt the chocolate in the microwave for two minutes. Make sure to stir the chocolate every twenty seconds after the first minute has passed. Then, mix the eggs and beans together and process them until they are smooth. Add the sugar and baking powder and pulse. Then, finally add the chocolate. Make sure that you scrape the sides of the bowl to get out every ounce of chocolate and do the same in the blender. Once you have finished, pour into a greased baking pan and bake for forty minutes at 350 F. Make sure to use gluten free flour when you grease and flour your baking pan.
