Sugar Free Cake Recipes





It doesn’t matter if it’s your birthday, your kid’s birthday, you’re Martha Stewart or Paula Dean; Diabetes doesn’t give you a vacation. But buying a sugarless cake from the grocery store can be a bit of a task—so what can you do? Well, you can make your own sugarless cake, homemade! You don’t need a cake mix or anything of that nature! Here are three sugar free cake recipes!

This cake is perfect for a potluck and is a great homemade cake mix! The perfect dessert for a bake sale, Christmas, Halloween, party, holiday, or anything else that you can think of! Not to mention that chocolate has helpful antioxidants!

Double Layer Chocolate Cake Recipe

Ingredients:

3/4th cup softened butter (Just leave it out of the fridge for about half an hour)
1 1/4th cup Splenda for Baking
3 Large Eggs
1 Tsp Vanilla Extract
1 ½ cups 2% milk
1/4th cup water/coffee
1 tsp baking soda
1 tsp baking powder
2 ½ cups all-purpose flour
1 1/4th cup cocoa powder
Electric Blender

Take out two eight inch pans and grease and coat in flour (Grease simply means to use a little snippet of butter or cooking spray on the inside of the pan to coat. It’s up to the baker what method they choose). Heat your oven to 375 F. Get out your blender and a bowl and beat the butter until it is really, really soft and creamy. Once you have done this, add the Splenda slowly until it is completely blended in and do the same with the eggs, one at a time. Make sure to blend completely after each egg and then do the same with the vanilla. Put your dry ingredients in a medium size bowl, separate from what is mixed, and quickly stir up. Mix the water/coffee with the milk. Add half of the flour mix and blend well. Then, add the milk and blend well and finally mix in the last of the flour mixture. Once you are done, bake the cake in the two separate pans for 35-40 minutes. Make sure to test for doneness. Frost how you would like.

This cake is sure to be a hit. It’s not necessarily something you would eat for dessert or for a party, but is great with coffee and can definitely be eaten at Halloween or Christmas. It’s also perfect for bake sales and potlucks. You can make this cake from scratch or you can utilize a cake mix in order to shorten the preparation time.

Sugar Free Blueberry Coffee Cake Recipe

Cake:
3/4 cup butter, melted and cooled
1 cup milk
3 eggs
1 teaspoon vanilla extract
1 1/2 cups granular sucrolose sweetener (such as Splenda®)
2 teaspoons baking powder
3 cups all-purpose flour
1 3/4 cups fresh or frozen blueberries
Topping:
1 1/2 cups malitol brown sugar substitute
3/4 cup flour
2 teaspoons ground cinnamon
1/2 cup butter, softened

This recipe is really simple: Preheat your oven to 350 F. From there, proceed to mix all of the wet ingredients for the cake. Then, mix the dry. Mix them together until they are just blended. Put in a pan and then mix the dry ingredients for the topping into the softened butter. Afterwards, sprinkle atop of the cake in the pan and then proceed to bake in the oven for 35-40 minutes. Serve with coffee of your choice and fixing.

Sugar Free Raisin Cake Recipe

2 cups raisins
3 cups water
2 eggs
3 tablespoons liquid sweetener
3/4 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 cups all-purpose flour
1 cup chopped walnuts
1 cup unsweetened applesauce

Preheat oven to 350 F.
Grease and flour a pan of your choice. Then, cook raisins and water in saucepan until raisins have absorbed water. Mix the wet ingredients in a bowl and slowly add the dry, mixing, except the nuts and raisins. Add them last and mix well. Pour into pan and cook for one hour or until done.
